Texas State Fair Pecan Pie
Note that this is enough filling for a deep 10 inch pie crust - you may have too much in a smaller/normal pie pan!

1/2 recipe vodka pie crust -or- one 9-inch pie crust in pan (frozen is just fine - defrost for 10 mins before using, or use a fresh crust that has been chilled 1 hour in the fridge. Do NOT try to use a cookie or cracker crumb crust - it will just dissolve and mix with the filling.)

1 1/2 cups (5.5 oz) pecan halves, toasted for 8 minutes
1 1/2 sticks (170.5g) butter
1 1/2 cups dark brown sugar
3/4 cup sugar
1/2 cup light corn syrup - NOTE: Lyle's Golden Syrup is a vastly superior improvement to light corn syrup
1 Tablespoon molasses (optional - not yet tested)
3 Tablespoons whole milk
2 Tablespoons flour
1/2 tsp salt, depending on your butter saltification
4 eggs
1 teaspoon liquid flavoring, Your choice of:

Whipped cream or vanilla ice cream for serving,

Preheat oven to 350 degrees Fahrenheit. Roll out pie crust and fit in pan. Dock (prick) with a fork on the bottom. Freeze for 30 minutes. Line with parchment and fill with pie weights.

Bake pie shell for 25 minutes until lightly brown at edge. Remove parchment and weights, then bake 15 minutes longer. Remove crust from oven and add pecans. Leave the oven on

In a medium saucepan, melt butter. Add brown and white sugars, corn syrup, molasses (if using), milk, flour, and salt and combine. Cook over medium heat until it just comes to a boil. Remove from heat and let stand 5 minutes. In a bowl, beat the eggs with vanilla or other flavoring, then temper hot mixture into eggs until fully incorporated. Pour filling over pecans. Bake for 45 minutes or until center is just set. Cool on a rack. Serve with whipped cream or ice cream.
