Christmas Morning Bacon Doughnut Holes (baked)
After seeing a version of this made by Kevin Gillespie on Top Chef, I made these for the boys every year for Christmas (in addition to biscuits with green chile sausage gravy). These are baked, not fried, and easily made in a mini muffin tin, no other special equipment required. A dunk while warm into melted butter and then rolled in cinnamon sugar completes the decadence. This recipe makes approx 24 doughnut holes, but judge by the amount of batter to go no more than 1/3 of the way up each muffin tin before baking.

Doughnut Holes:
1 1/3 c all-purpose flour
2 Tbsp cornstarch
1 1/2 tsp baking powder
1/4 tsp ground nutmeg (or more, to taste)
1 tsp ground cinnamon (more or less, to taste)
1 tsp salt (omit if using salted butter)
1/2 c sugar
2 Tbsp buttermilk powder (or use 1/2 c real buttermilk at room temp with the wet ingredients and omit the 1/2 c water there)
4 Tbsp (1/2 stick) melted butter
1 egg plus 1 egg yolk
2 tsp vanilla, bourbon, or rum
1/2 c (120ml) water to be mixed with wet ingredients if not using real buttermilk
1/2 pound thin slice bacon, cut into 1/4" strips, fried until crispy, drained, and rough chopped

Cinnamon Sugar:
12 Tbsp (1 1/2 sticks) melted butter
1 c sugar
1 1/2 tsp ground cinnamon (more or less, to taste)

Preheat oven to 400°F. Grease mini muffin tins.

Doughnuts: Whisk the dry ingredients except bacon in a medium bowl. In another bowl, whisk together all the wet ingredients except bacon. Pour the wet ingredients into the dry ingredients, and combine just to moisten, then fold in crumbled bacon. Do NOT overmix. Do NOT use a stand mixer.

Spoon about a tablespoon's worth of batter into each muffin tin cup - should come up no more than 1/3 of the way (you do not want "muffin tops," just for them to rise just to the top of each tin, approximating a sphere). Bake for 10 minutes.

Dusting: While doughnut holes are baking, make your cinnamon sugar: Melt butter in a medium bowl that is heavy and will retain heat (like glass or ceramic, not metal) so the butter will remain melted. Whisk sugar and cinnamon together in another larger bowl. As soon as doughnut holes are removed from the oven, take each hot/warm muffin and either very quickly dunk it in butter, or (preferred and uses less butter) use a silicone pastry brush to brush butter on all sides. Then immediately roll the muffin around in cinnamon sugar. Repeat with all muffins.
