Even More Foolproof Vodka Pie Crust
CK and ATC created a fascinating concept to eliminate the fussiness of consistently flaky pie crust making. Their recipe, however, is just too uncomfortably wet for me to like to work with - it sticks to everything. Humbly accept my slightly altered version. Enough for a 10 inch two crust pie.

Ingredients:
1 1/2 c all-purpose flour (yes there is another cup of the same flour further down)
1 tsp salt (reduce to 1/2 tsp if using salted butter)
2 Tbsp sugar
1/2 to 1 tsp (optional) dry ground spice of your choice: cinnamon, nutmeg, cardamom
1 c all-purpose flour
12 Tbsp (1 1/2 sticks) cold butter, cut into 1/4 inch slices
1/2 c cold vegetable shortening, cut into 4 pieces
3/8 c cold, from-the-freezer vodka

Crust: Process 1 1/2 c flour, the salt, sugar, and ground spice in a food processor until combined, about two one-second pulses. Open the bowl of the food processor and add the butter and shortening. Process until the mixture combines into a homogeneous mass that just comes together, about 15 seconds of continuous processing (dough will resemble cottage cheese curds and there should be no uncoated flour). Scrape processor bowl so nothing is stuck high and on the outside, redistribute the mass evenly around the bowl. Add the remaining one cup of flour, then pulse until mixture is evenly distributed around bowl and the dough has been broken up, 4 to 6 quick pulses. There WILL be uncoated flour, but the previous mass should be broken up and slightly mixed through. DO NOT over mix! Empty mixture into medium bowl.

Sprinkle vodka over mixture. With a rubber spatula, use a folding motion, press down and fold over just until dough sticks together and there is little loose flour. Divide dough into two even balls and flatten each into 4-inch disk. Wrap each in plastic wrap and refrigerate at least 45 minutes or up to 2 days. Can also be frozen.
