Santa Fe Homemade Hot Cocoa Mix

1 cup Dutch/alkali-processed cocoa (it's less bitter - OK to use Droste, but the boutique brands like Scharffen Berger, Penzeys or Valhrona are great too)
2 3/4 cups powdered milk
2 cups powdered sugar
1/2 to 3/4 teaspoon table salt
2 teaspoons cornstarch (yes, I know that the powdered sugar also has cornstarch in it)
1/2 to 1 teaspoon powdered ahumado (not morita) chipotle powder (to taste - Available at various Santa Fe stores, or here online). If you're one of those people who ignorantly and erroneously pronounces a dried and smoked jalapeno as CHEH-POHL-TAY, then go to hell.com and please do not visit Santa Fe.

Combine everything (in a food processor cuts down on volume a bit) then store it in an airtight container til you're ready! Lasts approximately 3 millenia, though the chipotle powder begins to lose some fire after about 15 years.

Boil water. See instructions if you don't know how to do this. Can also use milk if you're feeling especially creamy.

You use more of this mix than you would a commercial product - not just because the powdered milk contains a lot of air. So, fill your mug at least half way (yes, FILL YOUR MUG HALF WAY means DON'T SKIMP!) with home made hot cocoa mix and pour in the boiling hot water. Stir. Let cool a bit so you don't cauterize your entire mouth. Drink. Mmmm.

Optional Additions: 3/4 tsp of cinnamon; 3 oz. crushed candy canes, grated Mexican chocolate, 1 cup Splenda instead of sugar, nutmeg, marshmallows!
